Copycat Reese's Eggs

1. Add the dates, peanut butter, and coconut flour to a food processor and pulse until creamy and well combined.
2. Line a baking sheet or plate with parchment paper. Take about 1-2 tablespoons of the peanut butter mixture into your hand and form it into an egg shape, then add a small stem on top using more of the mixture.
3. Add to the prepared tray and repeat with the remaining peanut butter mixture.
4. Place the tray in the freezer for a few minutes. Meanwhile, begin melting the chocolate in a small saucepan over medium heat (or in the microwave).
5. Dip each "egg" in the melted chocolate one at a time, evenly coating the egg, then place it back onto the tray.
6. Drizzle any extra chocolate on top and return the eggs to the freezer or fridge to set.
