CHOCOLATE CARAMEL APPLE LOLLIPOPS

These chocolate caramel apple lollipops are a delicious and easy treat, perfect for fall and Halloween. They feature crisp apple slices dipped in chocolate and drizzled with a homemade (or store-bought) caramel sauce.
1. First, make the caramel by adding honey, maple syrup, coconut oil, and water to a pot and bring to a simmer over medium heat.
2. Continue to simmer, stirring frequently.
3. As the mixture cooks, you’ll notice that it first darkens in color and soon after, the caramel will start to lighten in color a bit; that’s when your sauce is just about done (usually 15-20 minutes).
4. Remove caramel from heat and let it cool.
5. Slice apples into 3/4″ thick slices and remove the stem and any seeds (you should get about 4 per apple).
6. Carefully insert a lollipop stick into the bottom of each apple slice.
7. Place the apples on a sheet tray lined with parchment paper.
8. Dip the apple slices in the melted chocolate and place them back on the sheet tray lined with parchment paper.
9. Drizzle the cooled caramel on top and sprinkle on desired toppings.
10. Add apples to the fridge to set for about 30-60 minutes, then enjoy!
