An accidental chocolate mousse recipe created while testing chocolate fudge pops. This easy, quick, and vegan chocolate mousse is made by blending a few ingredients and chilling it until thickened. Perfect for spooning straight from the jar!
1. Melt the dark chocolate and coconut oil in a microwave-safe bowl or over the stovetop in a pot.
2. Add the coconut milk, cacao powder, maple syrup, and vanilla extract to a blender, then pour in the melted chocolate and blend until smooth.
3. Pour the mixture into mini mason jars for single servings or one big bowl, then cover and set in the fridge to thicken for about an hour or more.
